Keep Warm with Winter Soups

Squash and chilli soup

  • 1 medium butternut squash, peeled and cut into 1” cubes
  • 1 onion, peeled and finely chopped
  • 1 red chilli, cored, deseeded and finely chopped
  • 1 tin coconut milk
  • Vegetable stock
  • Olive oil
  • Freshly ground salt and pepper

Sauté the squash, onion and chilli in a little oil for a few minutes then cover and leave over a low heat to sweat gently for 10 minutes. Add the coconut milk and enough stock to cover the vegetables. Bring to the boil and cover. Simmer gently for about 30 minutes or until the squash is tender. Season generously and whizz in a blender until smooth.

Bacon and lentil soup

  • 6 oz lentils
  • 2½ pints stock
  • 1 clove garlic, peeled and finely chopped
  • Freshly ground pepper
  • 7 oz bacon rashers, finely chopped
  • Small can tomatoes
  • 1 large onion, peeled and finely chopped
  • 1lb potatoes, peeled and diced
  • 2 tablespoons lemon juice

Wash the lentils before placing them in a saucepan with the stock, garlic, pepper, bacon, tomatoes and onion. Bring to the boil, cover and simmer gently for about 1 hour or until the lentils and bacon are soft. Add the potatoes and cook for another 20 minutes. Whizz in a blender. Add the lemon juice and check the seasoning. Serve hot garnished with crispy fried bacon or grated cheese.

Halloween Treats

Ingredients

  • 100g unsalted butter, softened at room temperature
  • 100g caster sugar
  • 1 free-range egg, lightly beaten
  • 275g plain flour
  • 1 tsp vanilla extract

 To decorate

  • 400g icing sugar
  • 3-4 tbsp water
  • 2-3 drops food colouring

 

Preparation time: less than 30 minutes

Cooking time: 10 to 30 minutes

Preparation method

1.      Preheat the oven to 190°C. Line a baking tray with greaseproof paper.

2.      Beat the butter and sugar together in a bowl until combined.

3.      Beat in the egg and vanilla extract, a little at a time, until well combined.

4.      Stir in the flour until the mixture comes together as a dough.

5.      Roll the dough out on a lightly floured work surface to a thickness of 1cm.

6.      Using Halloween-style biscuit cutters, cut biscuits out of the dough and carefully place onto the baking tray.

7.      Bake the biscuits for 8-10 minutes, or until pale golden-brown. Set aside to harden for 5 minutes, then cool on a wire rack.

8.      For the icing, sift the icing sugar into a large mixing bowl and stir in enough water to create a smooth mixture. Stir in the food colouring.

9.      Carefully spread the icing onto the biscuits using a knife and set aside until the icing hardens.

Italian-style beef stew

An easy, super healthy stew full of vitamin C.

 Ingredients:

  • 1 onion, sliced
  • 1 garlic clove, sliced
  • 2 tbsp olive oil
  • 300g pack beef stir fry strips, or use beef steak, thinly sliced
  • 1 yellow pepper, deseeded and thinly sliced
  • 400g can chopped tomatoes
  • Sprig rosemary, chopped
  • Handful pitted olives

 Preparation and cooking times

 Prep 10 mins                                       Cook 20 mins

 Method

1.     In a large saucepan, cook onion and garlic in olive oil for 5 mins until softened and turning golden.  

2.     Tip in the beef strips, pepper, tomatoes and rosemary, then bring to the boil.  

3.     Simmer for 15 mins until the meat is cooked through, adding some boiling water if needed. Stir through the olives and serve with mash.

Make it vegetarian – Leave out the beef and cook 1 chopped aubergine and 1 chopped courgette along with the pepper. Finish by sprinkling over some feta cheese.

Per serving:    225 kcals, Protein – 25g, Carbohydrate – 7g, Fat – 11 g, Saturated fat – 3g, Fibre – 2g, Sugar – 6g, Salt – 0.87 g

Traffic Light Ice Lollies

Colourful, fun and a great way to give fresh fruit to your children.

 

Ingredients

250g strawberries

4½ tbsp runny honey

3 large ripe peaches or nectarines, peeled, stoned and sliced

5 large kiwi fruit, peeled and sliced

 

Method

1.   Puree the strawberries with a hand blender. Sieve the puree to get rid of the seeds.

2.   Stir 1 ½ tbsp of the honey into the puree. Then pour the strawberry puree into each of the ice lolly moulds until each mould is ⅓ full.

3.   Freeze until firm – this should take 1 ½ hours.

4.   Repeat this process with the peaches and 1 ½ tbsp of the honey, then the kiwi fruit with the rest of the honey, freezing between each fruit.

Prep time:           10 min, plus several hours freezing

Cook time:          0 min

Speedy Spuds

Jacket potatoes can provide a speedy, healthy and tasty meal in a matter of minutes but the benefits can last much longer. Potatoes are a good source of energy and many other nutrients including vitamin C and folate.  Simply combine with chicken, fish, beans or cheese and a salad or green vegetables, for a complete meal on a plate.

If you simply microwave a potato, it is fluffy inside but you do not get any crispiness on the outside. Instead I prefer to microwave the potato to save time but finish it off in the oven – so I get the best of both worlds – speed AND flavour!

 

* Wash and prick the potato all over with a fork and place in the microwave on full power for around 6-7 minutes, depending on its size.

* In the meantime, preheat the oven to 200 ° C.

* When the potato is finished in the microwave, place on a baking tray, drizzle a little olive oil over the top, sprinkle with sea salt and place in the hot oven for approximately 15 minutes.

The result is a beautifully fluffy jacket potato in the middle but crispy and tasty on the outside too.

These are just a few of the many hundreds of topping ideas for a quick and tasty meal. A jacket potato is very nutritious so it is a great fallback when you can’t find inspiration or you don’t have much time to cook dinner.

Using Spring Fruit – Rhubarb

USING SPRING FRUIT – RHUBARB

rhubarbRhubarb is currently in season in Ireland so pop down to your local farmers market and pick up some. This unusual looking fruit grows well in the garden so get planting and enjoy your own personal crop. The part of rhubarb used in preparing food is the stalks. It is very versatile and can be made into the following: crumble, pie or jam. Here are a couple of tasty recipes to get you started.

Rhubarb and orange crumble.        
450g rhubarb, cut into 2.5cm lengths        
2 large oranges      
75g sugar

For crumble
175g plain flour
75g butter or margarine
100g caster sugar

Crumble

 Method

  • Heat oven to 180C/gas 4.
  • Place the rhubarb, orange juice and rind and 75g sugar into a pie dish, mix, pre-cook in the oven if using garden rhubarb, for 10 mins. The shop bought is tenderer and would not need pre-cooking.
  • Rub the butter or margarine into the flour, add the sugar and a little cinnamon if liked. Sprinkle the crumbs over the fruit.
  • Bake in the centre of the oven for 35-40 minutes, the topping should be golden brown.
  • Serve with custard or cream. Enjoy!

 Rhubarb Jam.     
450g rhubarb          Jam
450g sugar       
100g seedless raisins       
1 tsp grated lemon rind        
1 tsp grated orange rind        
1 tablespoon orange juice   
2 tablespoons lemon juice

Method

  • Cut the rhubarb into 1cm pieces, sprinkle with the sugar and leave for 6 hours.
  • Put into a large saucepan. Add the raisins, fruit rinds and orange juice.
  • Stir over a low heat until the sugar is dissolved, then add the lemon juice and boil steadily until setting point is reached. If you are using a sugar thermometer the temperature should be 105C/222F.
  • Allow to cool slightly, stir well, spoon into sterilised jars. Cool and label before storing.
